Suran ki Gravy wali Sabji, Jimikand Ki Sabji, Spicy Yam Curry Recipe, Surnachi Masala Rassa Bhaji,
Oal ki Sabji, ratalu ki sabzi

Ingredients
Jimmikand 300 grams
Tomato - VekVj - 2 (200 grams)
Chilli - gjh fepZ - 1
Ginger baton - vnjd - 1/2 inch
Curd - ngh - 1/4 cup
Oil - rsy - 4 tbsp
Cumin seeds - thjk - 1/2 tsp
Asafoetida - 1 pinch
Cloves - 2
Black pepper - 4
Cinnamon stick - 1
Black Cardamom - 1/2
Green coriander - 1 to 2 tbsp
Turmeric powder - 3/4 tsp
Coriander powder - 1 tsp
Red chilli powder - 3/4 tsp
Dry fenugreek - 1 tbsp
Salt - 1.25 tsp
Lemon - 1/2
Method
1. Wash and peel the jimikand. Chop it into pieces.
2. Now add water, chopped jimikand, salt and turmeric powder. Mix well, then add lemon juice.
3. Now close the cooker and cook at high flame till one whistle. After a whistle, turn off the flame and let the pressure release. When pressure is released, filter the jimikand.
4. Heat oil in a pan. Add boiled pieces of jimikand and shallow fry them at high flame. Flip and fry them till they turn golden brown from all sides. Then take them out.
5. Heat oil in the same pan. Add cumin seeds, asafoetida, turmeric powder and coriander powder. Saute them a bit.
6. Then add tomato-green chilli-ginger paste and red chilli powder. Mix well.
7. When it boils add cinnamon, black cardamom, balck pepper, cloves and dry fenugreek leaves. Roast at low flame the spices till oil separates. Stir occasionally.
8. When roasted, add curd. Mix well and cook till oil separates. Stir continuously.
9. When roasted, add water as required. Mix well then add salt, fried pieces and coriander leaves. Mix well, cover and cook at low flame for 4-5 minutes. Then turn off the flame and take it out in a bowl. Serve and enjoy the taste.
