ANGOOR RABRI : HEAT MILK IN A BOWL~ WHEN MILK COME TO A BOIL ADD VINEGAR MIX WITH WATER ~ KEEP STIRING MILK UNTIL MILK CURDLE ~ STRAIN THE CHENA ON A MUSLIN CLOTH ~ POUR COLD WATER OVER THE CHENA ~ SQUEEZE OUT WATER FROM CHENA ~TAKE CHENA IN A PLATE AND KNEAD WELL UNTIL SMOOTH DOUGH ~ ADD SUGAR POWDER AND MIX WELL ~ MAKE 3 PORTION OF CHENA ~ MAKE TINY ROUND DUMPLING DO THE SAME WITH COLOURED CHENA ~ BOIL WATER AND ADD SUGAR TO IT ADD THE COLOURED CHENA TINY DUMPLING TO IT LET IT BOIL FOR A WHILE REMOVE FROM FLAME AND ADD FEW ICE CUBE ~ FOR WHITE CHENA DUMPLING BOIL IT IN A CUP OF MILK WITH SUGAR BOIL FOR A WHILE AND REMOVE FROM FLAME ~ ADD THE WHITE CHENA DUMPLING TO THE COOLED BASUNDI MIX, DO THE SAME WITH COLOURED CHENA DUMPLING ~SPRINKLE WITH CARDAMOM POWDER ~ GARNISH WITH ALMOND & PISTACHIO FLAKES ~ APPLY SILVER & GOLD FOIL AND SERVE CHILLED.
