□ 10 TBSP BROWN SUGAR (CAN USE NORMAL SUGAR AND CARAMELIZE)
□ 2 TBSP CORN FLOUR
□ 2 TBSP ALMOND FLAKES
□ 2 TBSP PISTACHIO FLAKES
□ 2 TSP CARDAMOM POWDER
□ 2 LTR MILK
□ 1 TBSP VINEGAR / LEMON JUICE
PROCEDURE :
INSTANT BASUNDI PREMIXED:
IN A BOWL ADD MILK POWDER , BROWN SUGAR, CORN FLOUR, ALMOND FLAKES, PISTACHIO FLAKES, CARDAMOM POWDER MIX ALL WELL AND KEEP ASIDE ~ BRING 1 LTR MILK TO BOIL AND ADD THE ABOVE MIXTURE TO THE MILK AND STIR TO BOIL REMOVE FROM FLAME AND ALLOW TO COOL.

HEAT MILK IN A BOWL~ WHEN MILK COME TO A BOIL ADD VINEGAR MIX WITH WATER ~ KEEP STIRING MILK UNTIL MILK CURDLE ~ STRAIN THE CHENA ON A MUSLIN CLOTH ~ POUR COLD WATER OVER THE CHENA ~ SQUEEZE OUT WATER FROM CHENA ~TAKE CHENA IN A PLATE AND KNEAD WELL UNTIL SMOOTH DOUGH ~ ADD SUGAR POWDER AND MIX WELL ~ MAKE 3 PORTION OF CHENA ~ MAKE TINY ROUND DUMPLING DO THE SAME WITH COLOURED CHENA ~ BOIL WATER AND ADD SUGAR TO IT ADD THE COLOURED CHENA TINY DUMPLING TO IT LET IT BOIL FOR A WHILE REMOVE FROM FLAME AND ADD FEW ICE CUBE ~ FOR WHITE CHENA DUMPLING BOIL IT IN A CUP OF MILK WITH SUGAR BOIL FOR A WHILE AND REMOVE FROM FLAME ~ ADD THE WHITE CHENA DUMPLING TO THE COOLED BASUNDI MIX, DO THE SAME WITH COLOURED CHENA DUMPLING ~SPRINKLE WITH CARDAMOM POWDER ~ GARNISH WITH ALMOND & PISTACHIO FLAKES ~ APPLY SILVER & GOLD FOIL AND SERVE CHILLED.
